Pesto Africana

Today Claudia had to harvest a lot of basil from our garden and asked me to prepare a pesto. Uhm, ok, there’s no mixer, no mortar, no Parmesan cheese, no pine stones, no olive oil… So how was I supposed to prepare a tasty pesto???

Claudia then handed me a small bottle of olive oil that she had kept in a shelf. It still tasted good! – Perfetto! So pesto it shall be!

First of all I roasted some ground nuts to replace the pine stones. After that I washed the basil and cut it in the smallest pieces possible with the tools I had and did the same with the garlic. Then I squashed some of the roasted ground nuts using two spoons and added it to the green stuff. I finally mixed it, added some salt and pepper and almost the whole bottle of the olive oil.

Ecco il pesto africana! Buon appetito!

You cannot imagine how wonderful this simple dish tasted after these few weeks in Africa… Heaven must be tasting like some kind of African pesto… and a sip of water maybe…
